Recipe - Breakfast Cupcakes in Bed

Breakfast (cupcakes) in bed for Mother's Day?
Put a smile on your mum's face. Spoil her with these fun cuppies of bacon, eggs, avocado and pancakes.
They were so easy to make using Over The Top Silky Smooth Icing. The icing is soft but holds its shape really well.

Ingredients

  • 200g Dark Chocolate
  • 200g White Chocolate
  • 20g Salted Butter
  • 200g unsalted butter, softened
  • 1 tsp vanilla extract
  • 1 cup caster sugar
  • 3 eggs
  • 2 1/2 cups self-raising flour, sifted
  • 1/2 cup milk

Methods

Bake Cupcakes

Preheat oven to 180°C/160°C fan-forced oven. Line muffin or mini-muffin pans with paper cases.
Using an electric whisk, beat softened butter and caster sugar together until pale and fluffy, then whisk in eggs, one at a time, scraping down the sides of the bowl after each addition.
Add vanilla extract, self-raising flour and a pinch of salt, whisk until just combined, then spoon the mixture into the cupcake cases.
Bake for 15 mins until golden brown and a skewer inserted into the middle of each cake comes out clean. Leave to cool completely.

 

Chocolate Egg Yolk and Avocado Seed
Melt white and dark chocolate
Mix white chocolate with Over The Top Egg Yellow
Pour the melted chocolate into a round mould and let it chill in the freezer for 1 hour.

Decorate Bacon
  • In a bowl of Silky Smooth Icing, mix Over The Top Food Colour Red and Brown to create the bacon colour
  • On a baking sheet, use tip #67 and pipe the mixed icing to create the bacon stripe
  • Put them in the fridge to chill for 10 mins then place them on the cupcake
  • Use Piping Tip #2 and black icing to draw the face
 
 
Decorate Pancake
  • In a bowl of Silky Smooth Icing, mix a tiny amount of Over The Top Food Colour Yellow to create the batter colour
  • Pipe that mixture onto the cupcake
  • Use baking paper to cover the top of it and press it against the bench to create a flat surface
  • Let it chill in the fridge for 10 mins
  • Remove the baking paper and pipe another icing mixture ontop to create the second pancake stack
  • Use baking paper to cover the top of it and press it against the bench to create a flat surface
  • Let it chill in the fridge for 10 mins
  • Repeat this 1 more time to create the third pancake stack
  • Use edible brown dust to paint the surface and corner of the pancake cupcake
  • Add raspberry and white chocolate heart
  • Use Piping Tip #2 and black icing to draw the face
 
 
Decorate Avocado
  • In a bowl of Silky Smooth Icing, mix Over The Top Food Colour Apple Green to create the avocado colour
  • Using another bowl of Silky Smooth Icing, mix Over The Top Food Colour Green to create the darker avocado colour
  • Pipe an avocado shape onto the cupcake
  • Use baking paper to cover the top of it and press it against the bench to create a flat surface
  • Pipe the dark outter line with tip #2
  • Let it chill in the fridge for 10 mins
  • Put the chocolate Avocado Seed on top
  • Use Piping Tip #2 and black icing to draw the face
